Ascoli-stylemeat filled olives
Meat filled olives are the main element in the traditional fried mix from Ascoli Piceno, which also includes fried custard – savoury meets sweet. Pitted green olives are desalted then stuffed with a mixture of beef, pork meat and natural flavourings that has been cooked for about an hour in a braising pan and then ground. After they have been stuffed, the olives are rolled in flour, egg then breadcrumbs. They are deep-fried then served warm.
